
My daughter has many food allergies and sensitivities, including the common peanut, dairy, and gluten. These snack balls are loaded with protein and flavor while providing her with a healthy snack that will not wreak havoc on her. You really can't go wrong with adding whatever you'd like to this recipe. Here is a basic recipe we use often. The best thing about this recipe is you don't need to measure anything. You can use as much or as little as you want, as long as the consistency is thick enough to roll into balls. You can put anything you wish into these balls, whether you want them to be healthy or not.
Ingredients:
Almond butter (peanut if no allergy)
Instant oats
Raisins
Flaxseed
Maple syrup
Ground almond flour or powdered sugar (to coat the balls)
Chopped almonds or other nut; optional; to include in mixture and/or to coat the balls
Other ideas:
Chocolate chips
M&Ms
Dried cranberries
Sprinkles (for coating)
Different types of nuts (allergy dependent)

For my daughter I will make different versions of this recipe. I like to stick to healthier versions; however, I will make some with M&Ms as a treat.
Combine all of the ingredients you plan to use. The consistency needs to be where you can roll the mixture into a ball. After you make your balls, you can roll them in whatever you like to have as a coating: powdered sugar, oats, crushed nuts, almond flour, sprinkles, etc.
I wrap each ball in wax paper and put into a storage bag. Store in refrigerator for up to several weeks.
These are great for on-the-go snacks and lunches.
